Basmati rice (pronounced baz-MAH-tee) is a type of white rice grown in the Himalayas, India, and Pakistan, with India producing roughly two-thirds of the world's supply. It's a long-grain rice with a light nutty flavor and floral aroma that's popular in rice pilaf and as a side dish for curry. The Basmati grain is notable for expanding more than twice its dry length during cooking. Unlike other types of rice, the grains only expand lengthwise when cooked, allowing them to maintain their characteristic length and slenderness.Basmati is derived from the Hindi word for "fragrant," which is appropriate. The flavor and aroma of Basmati rice are intensely spicy, nutty, and floral (compared to other rice that is, not hot sauce or cashews or like, actual flowers).
