Shells peas. Wash and soak for 1/2hr. Slice green chilies. Heat ghee, fry and remove raisins and cashew nuts. Fry the onions till crisp and brown. Remove and keep aside. In the same ghee splutter cardamoms, cloves, cinnamon, cumin seeds, peppercorns and fry ginger and chilies. Add peas and fry for 3-4 mins. Then add drained rice and fry for 3mins.or til rice changes color. Add seasoning and enough water to come upto 3 cms above the surface of the rice. Put the lid and give a rapid boil till most of the water is gone and air bubbles can be seen on the surface of the rice. Reduce heat and allow to cook for another 10-15 mins.
