This urad dal has a black color and a somewhat earthy taste. It is usually used whole or split into two halves, which are then dried in the sun before being soaked prior to cooking. The seeds can be cooked alone or with other pulses such as chickpeas and lentils. Urad dal has a shelf life of one year if stored away from heat sources at room temperature or below.
