The outer brown skin of the yellow chickpea has been removed and it is then split to make chana dal. Like whole chickpeas, chana dal also makes an excellent addition to soups, stews and casseroles. It is also used as a very popular vegetarian substitute for meat dishes in curries chana dal is made by removing the outer layer of black chickpeas and then splitting the kernel. Chana dal retains the protein and fiber of chickpeas and has a firmer texture and lower glycemic index than whole chickpeas.
