Moong Dal is the Indian name for mung beans. Green gramme, or moong, is another name for mung beans. Both whole lentils and split lentils are utilised in Indian cooking. When the husks are removed, the green colour of the mung beans is shown, and the yellow hue of the beans is revealed. Moong dal is made by splitting a whole mung bean (the green lentil in the illustration above). Whole moong contains this little yellow lentil (green lentil). Moong dal is a split version of whole mung beans, also known as green gramme, that can be eaten with or without the skin. Yellow moong dal, yellow dal, or yellow tiny lentils are the skinned varieties. The skin split variation is well-known.
