Garlic, Allium sativum, is a herbaceous, yearly, bulbous plant in the family Amaryllidaceae developed for its sharp, eatable bulb of a similar name. The garlic plant can either have a short, woody focal stem (hardneck) or a milder pseudostem comprised of covering leaf sheaths (softneck). They have a trademark impactful, hot flavor that progresses and improves extensively with cooking. The unmistakable smell is predominantly due to organosulfur compounds incorporating allicin present in new garlic cloves and ajoene which structures when they are squashed or cleaved.
