Thermal drying is one of the most important unit operations in post harvest processing. It is used to reduce the water content in food and agricultural products like Fruits, Vegetables, herbs, Flowers etc. The purpose of performing this operation is to prolong the Shelf-Life of the products by reducing the water content to a level where growth of mould is inhibited.
