Brown onion, sometimes known as yellow onion, is a dry onion cultivar with a strong flavour. They are greenish-white, light yellow, or white on the interior, with yellow-brown or pale golden layers of papery skin. It has a stronger, more nuanced flavour than white onions due to its higher sulphur level. Depending on the season, a dozen different yellow onion cultivars are planted. Their nutritional value varies. Yellow onions are often accessible all year, having been harvested between spring and fall and then kept for the rest. It is the most widely planted onion in north Europe, accounting for 90% of all onions farmed in the US. They should be kept in a dark place at room temperature. They must be wrapped in paper and stored in the refrigerator for longer periods of time. Cut or peeled onions should also be preserved in the refrigerator in plastic, but only for a few days.
