Product Description

Used as thickeners, Gaur Gum Powder is recommended as modifiers of rheology in food products like dressings, soups, and sauces. They enhance the stability and appearance of barbecue sauces, relishes, ketchups, and salad dressings. Additionally, in bakery applications, they are employed to increase dough yield, provide greater resiliency, and enhance texture and shelf life. When used in pastry fillings, they prevent "weeping" (syneresis) of the water in the filling, thereby maintaining the crispness of the pastry crust. In meat products, they serve as lubricants.
